Physicochemical characterization of honey marketed in municipality of Aracati, CE, Brazil

Abstract

The objective of this study was to evaluate the physical and chemical quality of the honey from Apis mellifera marketed at the municipality of Aracati, CE, Brazil. The parameters analyzed were: Free Acidity (meq/kg); Reducing Sugars (%); Apparent Sucrose (%); Hydroxymethylfurfural (HMF, mg/kg); Moisture (%); Ash (%); Solids in Water Insoluble (%); Brix; and pH. All tests were performed in triplicate and the statistical analysis included average, calculating the standard deviation and coefficient of variation. It was found that all the honey samples analyzed presented two or three physical-chemical parameters out of the allowed by Brazilian legislation, and the contents of insoluble solids and HMF were the parameters that most varied.
