Physical and chemical quality of honey wild in the city of Apodi, RN, Brazil

Abstract

Brazilian Normative Instruction No. 11 October 2000 recommended standards of identity and quality of honey. This study aimed to evaluate the physical and chemical quality of the honey of wild flowers from different commercial spots in the municipality of Apodi-RN. For this, were collected 24 samples of honey from 12 different commercial spots in the city (two samples by commercial spots). These were transported to the Laboratory of Chemistry, Country Federal University os Semi-Arid (UFERSA), where the honeys were analyzed in duplicate for the levels of humidity (%), total acidity (meq.kg-1), hydroxymethylfurfural (mg.kg -1), sugars (%) and sucrose density (%). Data was statistically analyzed using analysis of variance (F test) and difference between means (Tukey test). It was found that much of the honey produced in the county assessed Apodi-RN, presented one or two physical-chemical parameters above those permitted by Brazilian law. The levels of total acidity and HMF in honey evaluated the parameters that were more varied according to the shop. Keywords: Honey, hydroxymethylfurfural, apparent sucrose
